What is Barfi?

Barfi, also called Burfi, barfee, borfi is a milk-based Indian fudge made of full-fat milk, sugar, and ghee. When the mixture thickens to fudge-like consistency, it is enhanced by adding dry fruits and nuts, spices like cardamom, kesar (saffron), or rose water. This is spread onto a greased plate.

To make it pretty and festive, they are further garnished with nuts or coated with an edible silver leaf called vark. On cooling, you can cut them into squares, rectangles, rounds, diamonds, ovals, etc. Use a knife or cookie cutter to get desired shapes.

The traditional method for making burfi requires condensing milk for hours. As an alternative to this milk powder, condensed milk, khowa (mawa), coconut, or almond flour is used.

Barfi is one of the best make-ahead dessert recipes, also freezer friendly. Check out some tips:

  1. Room Temperature: If you plan to eat the barfi within a day or two, store it at room temperature in an airtight container. Keep the container in a cool, dry place away from sunlight.
  2. Refrigeration: If you want to store the barfi for longer than two days, refrigerate it. Store it in an airtight container in the fridge. It can stay fresh for 7 to 10 days.
  3. Freezing: Burfi can also be frozen for more prolonged storage. Wrap the barfi tightly in plastic wrap. Place the wrapped barfi in a freezer bag and freeze. It can be stored for up to 2-3 months.

Bring barfi to room temperature before consuming it to enhance its best texture and flavor.

What does Burfee taste like?

Barfi is a milk-based Indian sweet that has a fudge-like texture made with milk or milk products like milk powder, condensed milk, and khoya, and not the chocolate used in traditional American recipes.

Why is my burfi not setting?

Burfi may not be set if you undercook the mixture. The mixture should leave the sides of the pan to put the burfi to set, or take a small piece of the mixture while you are still cooking and see if you can form a ball from that mixture. If yes, it means your burfi is ready to set.

Why is my burfi sticky?

Burfi may be sticky if it is undercooked. You can add milk powder and stir it for a quick fix or continue to cook further.

Why is my burfi chewy?

Cooking burfi for a longer time will make it hard or chewy. Once the mixture forms a mass and leaves the sides of the pan, stop cooking and check if you can easily create a ball of the cooked mixture. If yes, then simply switch off the flame. Cooking further than needed will make it hard or chewy.

What can be made from leftover Barfi?

Don't worry if you have leftover burfis. You can make rabri and kulfi or fusion desserts like burfi cheesecake jars, truffles, and ice cream.

Ingredients

Besan Burfi

  • 6 tablespoon Ghee
  • 1 cup Chickpea flour or Besan
  • ½ cup Milk powder
  • ½ cup Sugar
  • ½ cup Water
  • Pinch of cardamom powder

Instructions

  • In a pan on medium-low heat, add ghee. Add besan and roast it by stirring continuously until it is aromatic. It may take 5 to 8 minutes, and it will start releasing ghee.

    6 tablespoon Ghee, 1 cup Chickpea flour or Besan

  • Add milk powder and cardamom powder, and mix until combined. Switch off the flame and keep this aside.

    ½ cup Milk powder, Pinch of cardamom powder

  • Add sugar and water to another pan, bring it to a boil, and continue until it reaches one string consistency, also called chashni.

    ½ cup Sugar, ½ cup Water

  • Add this sugar syrup to the besan milk powder mixture and continuously stir on low flame till it becomes smooth and holds together like a dough. This will give you a barfi that is soft and mildly chewy. If you want a hard barfi, cook it for some more time.

  • Transfer the mixture to a greased plate or parchment paper and spread it evenly. Let this cool for 15 to 20 minutes.

  • Cut them into desired shapes and sizes. Serve as desired and enjoy.
